Ingredients of Creamy Mushroom and Biltong Soup

  1. You need of olive oil, extra virgin.
  2. It’s of red / yellow baby pepper finely diced.
  3. You need of small onion finely chopped.
  4. You need of crushed garlic.
  5. You need of punet button mushrooms.
  6. Prepare of mixed dried herbs.
  7. It’s of salt and freshly ground black pepper.
  8. You need of fresh cream.
  9. You need of full cream / whole milk.
  10. Prepare of water.
  11. Prepare of chicken stock pot / cube.
  12. You need of biltong (I've used game biltong sliced- you may substitute with fried bacon bits).

Creamy Mushroom and Biltong Soup instructions

  1. Heat oil in a pan and add in onion and chopped pepper. Sauté until onion is translucent and pepper is soft then stir in garlic..
  2. Add in sliced mushrooms (cut in half then sliced).
  3. Sauté until cooked. Season with very little salt (stock will be added later), some freshly ground black pepper and mixed dried herbs..
  4. Mix in cream, milk,water and stock and allow to simmer for about 7 – 10 minutes..
  5. Before serving mix in biltong / bacon bits..
  6. Serve with garlic and chillie roastie or toasted garlic bread.
