Ingredients of Thai Green Curry

  1. You need of chicken breast diced.
  2. Prepare of green pepper chopped into chunks.
  3. Prepare of baby corn.
  4. Prepare of red onion chopped into chunks.
  5. You need of bamboo shoots.
  6. Prepare of coconut milk.
  7. It’s of fresh kaffir lime leaf.
  8. It’s of olive oil.
  9. Prepare of Boiled Rice, to serve.
  10. You need of Lime, to garnish.
  11. It’s of Thai green curry paste – jar or pre-made.

Thai Green Curry instructions

  1. Cook the diced chicken in the olive oil for 2 mins on each side (4 mins in total).
  2. Add the chopped pepper, onion, baby corn, bamboo shoots and lime leaf, cook for 2 mins.
  3. Add the Thai green curry paste and cook for 2 mins.
  4. Stir in the coconut milk and cook for 2 mins.
  5. Boil rice per instructions (mine was ready in 2 mins). Drain, add to serving bowls. Add Thai green curry on top. Add lime garnish to finish.
